Es bastante pr\u00e1ctica y se puede utilizar como primer plato o entrada en cualquier ocasi\u00f3n.<\/p>\n<h2>Ingredientes<\/h2>\n<ul>\n<li>1 Kg. Auyama<\/li>\n<li>1 Zanahoria mediana<\/li>\n<li>\u00bd Kg. Esp\u00e1rragos frescos<\/li>\n<li>1 Cebolla grande<\/li>\n<li>1 ramillete de cilantro<\/li>\n<li>Sal y pimienta al gusto<\/li>\n<li>Caldo de pollo o carne hecho en casa o cubitos.<\/li>\n<li>4 dientes de ajo<\/li>\n<li>Aceite de oliva<\/li>\n<li>Queso rallado (parmesano o fresco)<\/li>\n<li>Crema de leche (opcional)<\/li>\n<\/ul>\n<h2>Preparaci\u00f3n<\/h2>\n<p>Siempre debes limpiar, lavar y pelar muy bien todos los vegetales. Se retira la parte blanca del tallo de los esp\u00e1rragos y solo se utiliza lo verde, el resto de los vegetales se cortan en trozos grandes.<\/p>\n<p>En una olla de tama\u00f1o mediano se coloca apr\u00f3ximadamente un litro de agua o de caldo hecho en casa puede ser de pollo o carne, se a\u00f1aden los vegetales ya limpios y cortados junto con el resto de los ingredientes, se deja hervir a fuego moderado por apr\u00f3ximadamente 45 minutos o hasta que esten muy blandos.<\/p>\n<p>Por ser la auyama y la zanahoria un poco dulces, debes probar si est\u00e1 bien de sal o si, por el contrario, debes agregar un poco m\u00e1s. Se retira del fuego y se deja reposar.<\/p>\n<p>Reserva un poco de caldo y con la ayuda de una licuadora de mano o de vaso se licua, si la crema est\u00e1 suficientemente espesa puedes incorporar el caldo que hab\u00edas reservado, esto se hace para evitar que la crema quede muy l\u00edquida.<\/p>\n<p>Ya est\u00e1 listo para servir, en algunos casos puedes a\u00f1adir una taza de crema de leche espesa o puedes agregar 2 cucharadas soperas de leche en polvo y licuar, si quieres darle un sabor un poco m\u00e1s delicado.<\/p>\n<p>Al momento de servir, puedes cortar cilantro fresco y rallar alg\u00fan queso de tu preferencia.
